Pork Katsu


Some things you might want...


  • Eggs

  • Thin cut Pork

  • Ritz like crackers( I just buy the cheep kind and the low fat ones work just as well.)

  • Veg. oil

  • Cinnamon

  • Flower ( I use whole wheat)

  • Ground Cardamon

  • Paprika

  • Ginger ( ground or fresh)

  • Minced garlic

  • Chili paste (Sriracha is always good or just go to the Asian section at the grocery store and grab what ever looks best)

  • Brown sugar

  • Vinegar

  • Soy Sauce

  • Mustard powder

  • Worcestershire sauce

  • Ground clove

  • Curry powder

  • and last very strange but VERY important... ketchup!

Lets start by making the Katsu or Tonkatsu sauce. In a small pot on low heat mix your ketchup, soy sauce, Worcestershire, garlic and brown sugar. Start off with very small amounts and add To Taste as you go. Once you have a good base sauce start adding the cinnamon, Ginger, chili paste, curry, clove, cardamon and Mustard powder. If it gets to thick use a little vinegar to thin it out. If it gets to thin, turn up the heat and cook it down a bit.



Next, the batter. Mix your egg and flower to about 1/2 the consistency of pancake batter. then add some seasonings ( Use what you think sounds good, i use salt, clove, curry, cinnamon and paprika).


Crush up your crackers REALLY good and set them close by.


Dip your pork in the batter and let it drip for a few seconds. Then cover with the crackers. Lightly shake the loose crumbs off and set on a plate. Stick your plate of pork in the refrigerator for about 10 min.


In a large pan, heat enough oil to come half way up the side of your pork. cook your pork one each side till its brown. Cut into finger width strips.


Serve with white rice. Drizzle your sauce over it all and yum! :)
